I have been making theses cookies in various combinations as long as I can remember. It is an easy recipe and you can whip up a batch in minutes. Who doesn't like to have home made cookies sitting in the kitchen? They happen to be vegan, gluten free and delicious.
Makes about 20 cookies
1 cup amaranth flour
1 cup rolled oats ( or GF oats)
1/2 cup raisins
1/2 cup chopped raw cashews (or other nuts chopped)
1 teaspoon cinnamon
1 teaspoon baking powder
1 carrot (grated)
1/4 teaspoon nutmeg
1/2 cup maple syrup (or honey)
1/2 cup Non GMO canola, light olive, or coconut oil
1 teaspoon vanilla
Combine all the dry ingredients and whisk until blended. Add grated carrots, raisins, and nuts.
Combine with a whisk the maple syrup, oil, and vanilla. Add to all other ingredients. Mix well, but do not over mix.
Preheat oven to 350 F.
Line a baking sheet with parchment paper and drop about a teaspoon of cookie batter for each cookie. Leave about 3/4 inch between each cookie.
Bake for 30 minutes or until golden brown.
Let cool completely on rack.
May be stacked on cake plate for presentation.
