These healthy nibbles have a rich nutty aroma and chewy texture. They are keto , paleo, and vegan, friendly. Sesame seeds are high in Antioxidants, and B Vitamins, with a dose of protein from the almond flour.

Ingredients
Makes 12 cookies
1 cup almond flour
1/2 cup black sesame seeds
1/2 cup desiccated coconut, or shredded coconut, pulsed in a spice grinder
1/2 cup maple syrup
1 tsp. baking powder
pinch of salt
1 tsp. vanilla
1/2 tsp almond extract, optional
Preheat the oven to 350. Have a baking sheet lined with parchment paper ready.
In a bowl, mix sesame seeds, almond flour, salt, and baking powder.
Add maple syrup, vanilla, and almond extract, if using. Mix well. Add desiccated coconut, mix again.
Make 12 small round balls, and place on lined baking sheet. Press gently to flaten the cookies.
Bake for 13 minutes. Place on cooling rack to cool. Can be stored in the refrigerator up to a week.
