This refreshing peak seasonal salad satisfies the sweet , tart, savory, and salty all at the same time.
Plums are rich in antioxidants. Great for the skin and bones. Tomatoes are a major source of the antioxidant lycopene, which has many health benefits.

Prep time: 15 minutes
Serves 4
4 heirloom tomatoes
4 plums, organic, save juice and extra plum for vinaigrette
6 oz goat cheese, or ricotta
1 tbs sherry vinegar
1/2 tsp sea salt
dash of fresh ground pepper
1/2 tsp lemon zest, organic
6 mint leaves, chiffonade
1 tsp thyme
Slice tomatoes thinly. Slice plums thin as well.
When you hit the pit, turn plum to continue slicing. Do this into a bowl, and reserve the juice and bits of plum from each of them. This will be the base of the vinaigrette.
Lay sliced plums in a circular pattern. Lay tomatoes on top in the same circular way. Crumble or pipe goat cheese on top.
Vinaigrette : Remove any skins from the extra plums. Add sherry vinegar, salt, pepper, thyme leaves and lemon zest to the plum juice. With an immersion blender or small food processor , blend until all ingredients come together. Taste for seasoning.
Drizzle vinaigrette around and on top of tomatoes and plums. Sprinkle mint on top and serve,
Cooks note: This is best served room temperature.
