These savory morsels are delicious for making a simple dinner for yourself, or a house full. High in protein, low in carbs. This recipe can be made with tofu, for a delicious vegetarian dish.
Meatballs
1 lb. ground Turkey
2-3 eggs
1 cup grated parmigiano Reggiano
1 cup parsley, chopped
1 tsp.sea salt,. to taste
4 garlic gloves (chopped fine)
2 tbsp. almond flour
1/4 cup olive oil for frying
Mix all ingredients in a medium bowl and combine well with clean hands. ( mixture can be made a day in advance).
Roll mixture into medium size balls, or desired size. Can be made smaller. Set aside.
When ready, heat a large cast iron or skillet to medium heat and add olive oil. Place meatballs , not touching, so they don’t steam. When golden brown on all sides , meatballs are done. About 15 minutes.
Pair them with your favorite side dish, such as Zucchini Spaghetti, sauteed spinach, or a mix of lettuces and radishes.
Cooks Note: These meatballs can be baked in the oven at 375, for 20 minutes.
