This high antioxidant summer dessert can be made raw or popped in the oven.
Walnuts add an extra boost in brain health.

Serves 4
2 pints organic blueberries
2 tbsp. coconut sugar, to taste
1 tsp. lemon zest, organic
1/2 lemon, juiced
8 medjool dates, chopped
1 cup raw walnuts, chopped
2 tbsp. maple syrup
1/2 tsp. vanilla
1/2 cup whipping cream, or coconut cream, organic
mint for garnish
For Raw
In a food processor, or chopped by hand, mix dates, walnuts, maple syrup, tsp.lemon juice, and vanilla. Add a bit of spring water if consistency is too thick. Set aside.
Mix berries, sugar, lemon zest, and juice. Let sit for 5 minutes to macerate.
Coconut cream, put a can of unsweetened coconut milk in refrigerator over night.
Remove ONLY the solid cream. Put in a bowl, add vanilla and coconut sugar. Mix with hand mixer or kitchen aid, until it looks like cream. Top berries with date mixture and cream. Same process if using whipping cream.
For oven cobbler: Preheat oven to 350
Place berries in an oven proof dish, add the date mixture on top, leaving some berries exposed. Bake for 20-30 minutes. Let cool a bit . top with cream and mint.
