This creamy decadent mousse is a scrumptious healthy finale to any dinner.
Goji Berries are a plant based super food high in antioxidants. Cacao nibs have energy boosting nutrients.

Serves 4
1/2 lb raw cashews ( soaked for 8 hours or over night)
1 pint fresh raspberries, ( or1/2 bag of organic frozen raspberries)
2-3 tbsp. Cacao Nibs
2-3 tbsp. goji berries, soaked for 15 minutes, drained, optional
1 tsp vanilla extract
1/4 cup maple syrup, or to taste
1 tbsp. fresh lemon juice, or to taste
zest from 1 lemon
a pinch of sea salt
2 tbsp. unrefined coconut oil, melted
1 tsp rose water, Optional
Drain soaked cashews and lay them out on cotton dish towel.
Pour cashews into a food processor along with all the ingredients, EXCEPT , cacao nibs and goji berries.
Process for 5-7 minutes. It takes that long for the mixture to become really creamy. Pour mousse into a glass bowl, cover and refrigerate for at least 2 hours. Can be made a day ahead. Takes 2 minutes with a Vitamix.
When chilled, lay a few goji berries and cacao nibs on the bottom of clear glass parfait or other glass. Spoon in a few tbsp. of mousse, then continue to layer. Sprinkle cacao nibs and goji berries on top.
Cooks note: if you do not have a high quality processor you might need to turn off the motor for a few seconds in-between blending.
